what’s for lunch?

I have had several conversations with other moms recently about what I pack in the boys’ lunches for pre-school.  Dexter’s a bit pickier than Theo as he does not eat raw vegetables very well, but they both eat a wide variety of foods.

I have been discovering recently that the boys will eat an unexpected variety of foods cold. But it makes sense if you think about it…they goof off at mealtimes and by the time they get around to eating all of their food (especially their veggies), it’s all cold. Since their pre-school doesn’t warm up lunches, we have to get creative sometimes.  Here’s are some go-to items that I pack for them.

Proteins:

  • A small (taco size) tortilla with bacon or lunchmeat and shredded cheese. I’ll stick this in the microwave for a few seconds so the tortilla is more pliable and the cheese melts a bit and either roll it up or fold it in half.
  • To my dismay, bologna sandwiches are a big hit
  • Peanut butter & jelly of course!
  • Crackers & cheese or peanut butter
  • Cold pizza
  • Cold cheese or chicken and cheese quesadillas
  • Tuna or chicken salad and crackers/pretzels
  • Smoked turkey sausage or hot dogs, sliced into circles
  • Cold pre-cooked seasoned chicken or steak pieces (grilled at home or from the small Tyson pouches found in the lunchmeat section)
  • Cold breaded baked chicken nuggets (also found in the lunchmeat section)

Starch/Sides – if their protein isn’t accompanied by bread/crackers, etc.

  • Potato salad
  • Cheez-its
  • Goldfish crackers
  • Popcorn
  • Pretzels
  • Nutri-grain bar
  • Ritz crackers
  • Oyster crackers

Fruits/Vegetables:

  • Grapes
  • Berries
  • Banana
  • Clementines/mandarin oranges (fresh or pre-packaged)
  • Small apple (& maybe some peanut butter)
  • Raw baby carrots or carrot chips & ranch dressing
  • Broccoli – cooked OR raw (Dexter won’t eat it raw)
  • Cauliflower – same as above
  • Edamame – shelled or in the pod, this is a favorite
  • Peas
  • Cherry or Grape tomatoes (another favorite), both yellow and red
  • Pineapple (pre-packaged or canned then put into small containers) – another favorite
  • Sliced cucumbers
  • Chopped red or green peppers (raw)

Dairy/Other:

  • String cheese or chunks of cheese
  • Cottage cheese
  • Yogurt
  • Cashews/Pistachios

I usually send about four items so a typical meal would include one thing from each section or nothing from the starch section and 2 things from the Fruits/Veggies section.  For example, chicken salad w/crackers, string cheese, grapes, and edamame would be pretty standard.  They put their leftovers back in their lunch boxes when possible so it’s fairly easy for this mom to determine how well they are eating and if they like what I am packing.  Although I sometimes feel like I am sending the same things over and over, they don’t seem to tire of repeated meals.

Do you struggle with ideas for packing lunches? Do my lists have anything unexpected or anything new that your little one might be willing to try?

a new opportunity

So…I have a little announcement to make and I hope you’ll join in my excitement. Or just humor me.

A year or so ago, I came across a Facebook page called The Affordable Mouse. This was the first Disney-themed Facebook page I began following and found The Affordable Mouse’s website to be indispensable while planning our own Disney vacation last fall.  First and foremost, The Affordable Mouse is a travel agency that helps people make their Disney dreams a reality, regardless of budget.  There are countless resources on the website and a wealth of Disney travel information within the blog posts.  I’ve enjoyed just browsing this and other similar sites for fun, but found them especially helpful when I was seeking out answers to a host of vacation questions that popped up while we were planning our trip.

I said all that to say this: A couple of weeks ago, The Affordable Mouse posted that writers were needed for the website’s blog.  I thought about it briefly, questioning whether or not I had the writing AND Disney experience required to even inquire.  Before I allowed too much self-doubt to creep in, I emailed Nancy and shared with her a couple of links to my blog.  I explained that I loved Disney and I loved writing but was unsure if I had the skills to combine my passions on her website for the world to see.  Within the day, she had written back and expressed interest in having me join the writing team.  We exchanged a few emails discussing details. I had a lot of questions.  My niche will be Disney with Little Kids but that can go in so many directions. I hope I don’t run out of ideas, because my posts will be featured every other Monday, starting on August 25th.

Needless to say, I’m really excited for a new writing opportunity and challenge. I’m also pretty okay with having an excuse to think about Disney more than I already do. I hope you will “Like” The Affordable Mouse on Facebook and visit their blog often to read my posts there!

indiana state fair – 2014

A look back: state fair (2013) | state fair (2011)

First things first, we have this tradition every year that we go to the state fair (we didn’t make it there in 2012 due to being in the middle of remodeling our newly purchased home).  We take a photo inside a tractor tire. I love doing this – we have several photos that we take each year. I enjoy comparing year to year to see how the boys have grown and this is one of my favorites. Dexter hasn’t been too interested in participating with me so far. Maybe next year.

PicMonkey CollageIt’s wild to see the similarities and differences from year to year.

A pit stop at The Dairy Bar to grab a delicious grilled cheese sandwich. The boys had American on White while I enjoyed Pepper Jack on Sourdough.

Funhouse mirror fun:IMG_2333

Last year we were disappointed that we hadn’t planned ahead for the boys to see the Monster Truck show.  We failed to plan for it again this year, but felt lucky when we discovered that it was taking place Sunday during our visit.  The boys were extremely intrigued!IMG_2349 IMG_2356 IMG_2361 IMG_2362   They enjoyed it for a while but after about 45 minutes, Theo’d had enough of the loud engines and was begging to go.  Ryan and I pouted a little and Dexter just goes with the flow so he didn’t protest. Wouldn’t you know, it wasn’t long before Mr. Grumpy Pants was passed out, fast asleep.

Since Theo kind of ruined the Monster Truck show for the rest of us, we rewarded Dexter’s good behavior by allowing him to choose a ride to ride. I was not planning to do any rides – I’m just not a fan of fair rides – I don’t trust them at all.  So this was a big deal for me, letting him ride these darn boats!IMG_2455

Theo continued sleeping for a bit longer so he missed out on the meet n greet with this Dino.  Dex was ALL ABOUT it until we got in line. Then he said “I want you to go with me, Mommy. I want you to hold me.” So I passed my camera off to Ryan and thank goodness I did… we were NOT expecting Dexter’s reaction when T-Rex roared and the lady pictured below tried to hand Dexter the dinosaur’s chain for our photo op.IMG_2472 IMG_2473It was so funny  and cute. He did get over it and smile towards the end of this brief interaction but those pictures weren’t as adorable.  After about six and a half hours we wrapped up our day at the fair. Another Midwest annual tradition done and in the books!
